Roasted Broccoli and Cauliflower with Lemon and Garlic



This side dish is so yummy and fast! I actually cut up all the broccoli and cauliflower, but only cooked half, leaving us with veggies to munch on for days.

Roasted Broccoli and Cauliflower with Lemon and Garlic

1 head broccoli (1lb) cut into 1 inch florets and peeled stalks
1 large head cauliflower (2lbs) cut into florets
3 tbsp olive oil
4 garlic cloves
2 lemons, thinly sliced
coarse salt
ground pepper (I can't stand pepper, so I left this out)

Preheat oven to 475. On two rimmed baking sheets, toss broccoli and cauliflower with oil, garlic, and lemons. Season with salt and pepper. Roast until vegetables are browned and tender, 25 to 30 min, rotating sheets top to bottom and tossing vegetables once halfway through.

Serves 4, prep 10min, total 40min
